Coffee peaks three months after it's roasted - that's when the flavor is at its fullest. Best within 30 days of opening. Seal it tight, keep it away from heat and light, and store it somewhere cool and dry. Every bag is stamped with a roasted-on and best-by date. Those dates mean something. Check them.
